Kuli Panayaram(Jhatpat Appey)

Some times we got bored with Dosa and Idly.Here is the simple and easy tiffin using same dosa batter.My mom used to cook this for our tiffin and breakfast.We can eat with coconut chutney or as it is.A special vessel called panayara chatti is used to make this wonderfull dish. You can get that vessel here .


INGREDIANTS:



Dosa/Idly Batter - 4 cups

Finelly chopped onion - 1 medium onion

Finelly chopped green chiilies - 5

Egg - 2 (for softness)

Mustard seeds - 2tsp

Urad dhal - 4 tsp
Chenna dhal(Kadalapariappu) - 4tsp

Cumin seeds - 2tsp

Finelly chopped Curry Leaves- 1 1/2tbsp

Finelly chopped Corinder Leaves -5 tsp


METHOD:


Mix eggs with dosa/idly batter and keep aside.Heat oil in kadai ,add mustard seeds and allow it to carckel.Then add urad dhal,curry leaves ,cumin seeds,chenna dhal,green chillies and saute them for 2 mins.Now add onion and cook it for 5 mins.Finally add corinder leaves. Add this sautéed mixture to the batter and mix well. Add salt for your taste.Heat the Kuli Paniyaram Chatti and add little oil in each hole and pour batter in each hole.Cook them on both the sides untill brown color.Serve it with coconut chutney and sambar.

Chicken Tandoori - Using conventional Oven

This is a popular chicken dish for cocktail parties. This recipe can be used for making skewered meat, fish or large unpeeled prawns.We can make it in our home easily using the conventional oven.




INGREDIENTS:
Chicken Skinless - 1Kg

For Marinate:
Garlic Paste - 1 tsp
Ginger Paste - 1 tsp
Lemon Juice - 8tsp
Chilli Powder - 2tsp
Coriander Powder - 2tsp
Garam Masala - 2tsp
Color Powder - 1/4tsp
Yogurt - 150ml
Butter/Ghee - 1/2 cup

METHOD:

Mix all the above ingredients except butter/ghee ,and apply the mixture evenly on the chicken pieces.Add salt for taste.Marinate for about 1-2 hours.Then apply the butter/ghee over the chicken pieces and place it in coventional oven.Make sure the tray is covered with foil.Do not cook it in open.Preheat oven to maximum, 240 C or 475 F.Cook in an oven for 10 minutes or so, turning over once and cook well on all sides. Chicken is dangerous eaten half cooked. Remove chicken from oven and put it in broil for 5 mins .Now you have to put the chicken in lower part of oven.Foil is not needed bcoz the fire should directly touch the chicken parts.Turn frequently while broiling.Serve hot, garnished with lime slices.

Carrot halwa


Carrot halwa is a very nutritious and tasty indian sweet dish. Carrot is very important for growing children. For children who do not like to eat carrot either raw or cooked, you can try giving this sweet dish and they will ask you more.





INGREDIENTS:

Carrot - 1/2 kg
Sugar - 2 cup
Ghee - 4-5 tsp
cashew - 10 nos
cardomom powder- 1/2 tsp
milk - 1 cup

METHOD:

Grate the carrots and keep aside.Heat ghee in a thick vessel. Make cashew into small pieces. Fry the cashews in ghee and keep aside.Boil the milk for 15-20 minitues in medium heat .Once it starts thickening, stir continuously.Put little ghee in a pan and add the grated carrots.cook it in medium heat and stir occassionally for 5 mintues.Now add the milk and boil it untill milk evaporates,then add the sugar and stirr continously in low heat .Now add the remaining ghee and stir on low heat till the mixture collects in a soft ball or the ghee oozes out.Serve with decorated cashews and cardomom powder.
